About Gato Pescado Coffee

When faced with the end of his college career and his required senior project, owner Xavier had trouble picking an idea, but knew he wanted to do one he would find fun, fulfilling, and a little unique. He thought back to when he worked at a donut coffee shop, where he had enjoyed making and serving drinks, and leading a team as a supervisor. From there, he came up with the idea of a mobile coffee cart for vending and catering.

Not only would this senior project fulfill what he wanted, but it would also allow him to to use all the skills he’d learned throughout his life and college. He could use both the engineering and liberal arts side of his degree by desiging and fabricating the cart, creating the website, and creating a brand that resonates with customers.

Through Gato Pescado Coffee, Xavier looks forward to serving the San Luis Obispo and Cal Poly community and bringing coffee wherever these communities need it.
